Our first stop will be at the workshop of Giuseppe of Leonessa and Luca of Fara Sabina to relish the production they have brought from their farms to give us a unique “Aperitivo” experience. Giusseppe is a shepherd and takes care of his transhumant sheep like it was done in the region 2,000 years ago making an excellent organic formaggio pecorino. Luca cultivates olive and fruit trees and in winter drawing upon the popular culture of the elders, dedicates himself to the collection of wild herbs such as cicoria salvatica (wild chicory), raponzoli, borage and wild artichoke preserving the ancient recipes of the region.
We will take sips from Lazio’s ancient vines, cultivated to cut through the heaviness of the region’s cuisine. Perhaps a variety of Cesanese red, who finds it spiritual home in Lazio, to drink with Giuseppe’s all-natural meats and hand-produced sheep cheese. Why not a rare Pecorino white that has been brought back from near extinction whose origins can be traced to the 2nd century with bites of bruschetta made with innovative and traditional toppings from seasonal ingredients from the farm and in winter wild harvested from the middle Adriatic forrest.
We will then navigate our way through a maze of cobblestone and taverns to our next stop, a typical Italian bar, to have a caffè or an orzò while you learn the ins and outs of ordering the 3 minute Italian pause.
We will continue our journey to a neighbourhood Piazza that has replaced prior activities dating back to the 1st century to have a choice of 3 flavours of all-natural organic gelato made with innovative combinations by one of Rome’s artisan stars who has passionately dabbled in her craft since age 14 and has gone on to become an entrepreneurial success story.
Our Rome tour will end here, but you’ll still be able to explore more of the area. Your local guide will give you a list of quality venues where you can dine, drink, or snack, so you can continue your adventure on your own in the liveliest and most romantic district of Rome’s city centre!
